Barely a third of one percent of the vineyards in Champagne grow anything other than the big three, Chardonnay, Pinot Noir, and Pinot Meunier. Which, in our humble opinion, is a great shame. Pinot Blanc in particular brings lush tropical notes of pineapple to the party (a delightful sensation in a glass of fizz).
