Nøvar cider is from Evanton near Inverness. Will Ferguson has trained with French cidermaking legend Eric Bordelet and you can tell with the quality of the cider he has made here. Presented in a 330ml bottle and made with a 50/50 blend of bittersweet and sharp apples. Fermented in steel and matured for a year before being cross flow filtered this cider showcases the best of the apple with a light sparkle adding to the pleasant tannins from the Dabinett and Major apples balanced with the acidity of Browns. Hints of smoke and spice round off a wonderfully easy drinking bottle.
